First brown your onions in a stainless steel pot. Take half of a pumpkin, cut in chunks, and put it on top of your browned onions.
Season.
Add the water and simmer till pumpkin is soft.
Blend with an immersion blender until smooth and creamy.
Add 1/4 cup half and half, 2 TB butter and stir until smooth.
Now you have beautiful soup.
Add, salt, pepper and olive oil, and stir.
Serve.
Pumpkin Soup (Eating the Whole Pumpkin)
Ingredients
- • 1 small onion, chopped & browned in canola oil
- • ½ tsp. poultry seasoning
- • ½ tsp. tumeric
- • ⅛ tsp paprika
- • ½ inside of a small pumpkin, cut in pieces
- • enough water to cover the pumpkin, in the pot, by ½"
- • a pour of white wine
- • ¼ cup half & half
- • 2 TB butter
- • a pour of olive oil
- • 1 tsp salt
- • pepper to taste
Instructions
- Brown the onions in a small bit of canola oil in your pot.
- Add poultry seasoning, turmeric, and paprika and stir until they blend fully with the oil.
- Add pumpkin pieces into pot and cover with water. Add a pour of white wine and simmer on low for 15-20 minutes, until you can easily stick a sharp knife through the pumpkin and pull it out.
- Blend with immersion blender. Add half and half and butter and stir until butter melts.
- Add salt, pepper, and a pour of oilve oil and stir.
