Baked Pumpkin (Eating the Whole Pumpkin)

Take your cubed pumpkin, sprinkle with poultry seasoning, scatter with brown sugar. Add a pour of olive oil, a few pats of butter, salt, and pepper. (We had some leftover cauliflower, so we included it in the version below. But it tastes great with just pumpkin, too.)

Bake at 350 for about an hour, checking every 20 minutes to be sure it isn’t burning or drying out. Add a little water as necessary. Turn in the oven as necessary. You can also cover with foil if you need to cook longer and the pumpkin is getting too brown.

Scatter a handful of mixed nuts over the top. Enjoy.

  • • ½ pumpkin, chopped in ½" - ¾" cubes
  • • sprinkle of poultry seasoning
  • • 2 tsp brown sugar
  • • pour of olive oil
  • • a few pats butter
  • • salt and pepper to taste
