Saucy "Sausage" & White Beans w Basmati Rice & Salad

Serves: 3 medium eaters
Ingredients
- • Organic canola or grapeseed oil
- • 1 small onion, sliced thick
- • Green pepper of your choice (such as Italian sweet, green bell, poblano), sliced thick
- • 4 Field Grain chipotle sausages, sliced thin (you can usually find this at Whole Foods)
- • ½ tsp. organic garlic powder
- • ½ tsp. organic onion powder
- • ¼ tsp. organic fennel powder
- • 1 cup Muir Glen crushed tomatoes with basil
- • 1 can organic white beans (such as Great Northern)
- • ½ tsp. salt
- • Freshly ground pepper
- • Organic olive oil
- • 1 tbsp. fresh herbs (such as: basil, italian parsley, or oregano)
- FOR THE SALAD
- • lettuce
- • dandelion greens (pick anywhere outside that's pesticide-free)
- • walnuts
- • olive oil
- • fig infused balsamic vinegar
- • salt
- • pepper
- • garlic powder
Instructions
- Put one pour of the canola or grapeseed oil in an iron sauté pan
- Add the onion in the pan, sauté until lightly browned (5-8 minutes) on medium heat
- Add the pepper (half if it's a bell pepper, whole if it's a smaller pepper). Turn heat to low & continue sautéing
- Add the Field Grain sausage. Continue sautéing until sausages are browned. Add more oil if necessary
- Stir in the garlic, onion, & fennel powder
- Stir in the crushed tomatoes
- Drain and rinse the white beans, add to the pan, stir together & cook a minute or two until beans are warmed
- Add the salt and a few twists of pepper to the pan
- Turn off the heat, add a pour of organic olive oil & a tablespoon of whatever fresh herbs you have on hand.
- Serve with basmati rice made with 1 tsp. salt & ½ tsp. onion powder
