Saucy "Sausage" & White Beans w Basmati Rice & Salad

Serves: 3 medium eaters
 
Ingredients
  • • Organic canola or grapeseed oil
  • • 1 small onion, sliced thick
  • • Green pepper of your choice (such as Italian sweet, green bell, poblano), sliced thick
  • • 4 Field Grain chipotle sausages, sliced thin (you can usually find this at Whole Foods)
  • • ½ tsp. organic garlic powder
  • • ½ tsp. organic onion powder
  • • ¼ tsp. organic fennel powder
  • • 1 cup Muir Glen crushed tomatoes with basil
  • • 1 can organic white beans (such as Great Northern)
  • • ½ tsp. salt
  • • Freshly ground pepper
  • • Organic olive oil
  • • 1 tbsp. fresh herbs (such as: basil, italian parsley, or oregano)
  • FOR THE SALAD
  • • lettuce
  • • dandelion greens (pick anywhere outside that's pesticide-free)
  • • walnuts
  • • olive oil
  • • fig infused balsamic vinegar
  • • salt
  • • pepper
  • • garlic powder
Instructions
  1. Put one pour of the canola or grapeseed oil in an iron sauté pan
  2. Add the onion in the pan, sauté until lightly browned (5-8 minutes) on medium heat
  3. Add the pepper (half if it's a bell pepper, whole if it's a smaller pepper). Turn heat to low & continue sautéing
  4. Add the Field Grain sausage. Continue sautéing until sausages are browned. Add more oil if necessary
  5. Stir in the garlic, onion, & fennel powder
  6. Stir in the crushed tomatoes
  7. Drain and rinse the white beans, add to the pan, stir together & cook a minute or two until beans are warmed
  8. Add the salt and a few twists of pepper to the pan
  9. Turn off the heat, add a pour of organic olive oil & a tablespoon of whatever fresh herbs you have on hand.
  10. Serve with basmati rice made with 1 tsp. salt & ½ tsp. onion powder
