Banana and Oat Muffins

These banana oat muffins are not only good for you, they are a delicious treat as well, perfect for a sweet snack, or a quick breakfast!

Let oats soak in milk.

Mash a banana and add to wet ingredients. The riper the better (as they have a better muffin-texture and are sweeter!). The best are bananas that have entirely gone brown, which you can save and keep in the freezer for just this occasion!

Add 1 egg.

Sift dry ingredients together.

Mix all. Add in just enough chocolate chips.

Then spoon into muffin tins.

Bake!

Delicious. Enjoy as a tea-time treat, right out of the oven!

Banana and Oat Muffins

Serves: 12
Ingredients
  • 1 cup quick oats
  • 1 cup sour milk (OR 1 cup milk + 1⅓ TBSP vinegar)
  • 1 banana, mashed
  • 1 egg
  • ¼ cup brown sugar
  • ¼ cup oil
  • 1 cup sifted flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp baking soda
Instructions
  1. Soak oats in milk 1 hour (you can do less if you don't have time, just let them get soft). Add egg and other wet ingredients, beat well. Pour in sifted dry ingredients and mix; bake 15-20 minutes until done.
