These banana oat muffins are not only good for you, they are a delicious treat as well, perfect for a sweet snack, or a quick breakfast!
Let oats soak in milk.
Mash a banana and add to wet ingredients. The riper the better (as they have a better muffin-texture and are sweeter!). The best are bananas that have entirely gone brown, which you can save and keep in the freezer for just this occasion!
Add 1 egg.
Sift dry ingredients together.
Mix all. Add in just enough chocolate chips.
Then spoon into muffin tins.
Bake!

- 1 cup quick oats
- 1 cup sour milk (OR 1 cup milk + 1⅓ TBSP vinegar)
- 1 banana, mashed
- 1 egg
- ¼ cup brown sugar
- ¼ cup oil
- 1 cup sifted flour
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp baking soda
- Soak oats in milk 1 hour (you can do less if you don't have time, just let them get soft). Add egg and other wet ingredients, beat well. Pour in sifted dry ingredients and mix; bake 15-20 minutes until done.
